This fair, sponsored by the Tokushima Carrot Promotion Council, is a special event where you can fully enjoy the charm of "Tokushima spring carrots," which come into season with the arrival of spring.
Why are Tokushima's spring carrots so sweet?
Tokushima Prefecture boasts one of the highest spring carrot production volumes in Japan. Within this region, the fertile sandy soil of the lower Yoshino River basin, a leading production area, offers excellent drainage and is rich in minerals, creating an ideal environment for carrot cultivation. The greatest secret to its deliciousness lies in Tokushima's unique "tunnel greenhouse cultivation" and "wintering" methods. Seeds are sown in the autumn and covered in large tunnel greenhouses to protect from the cold north winds. By deliberately exposing the carrots to the harsh winter cold, they store up plenty of sugar to prevent freezing, resulting in an astonishingly sweet, fruit-like flavor. Furthermore, by blocking rain within the greenhouse and thoroughly controlling soil moisture, the carrots' characteristic bitterness is reduced. As a result, they grow to be juicy to the core and soft enough to be eaten raw.
